THE SPREAD OF FISH LIGULOSIS IN THE SAMARKAND REGION AND THE VETERINARY-SANITARY ASSESSMENT OF THE MEAT OF INFECTED FISH

Abstract
The article studies the epizootological situation of ligulosis of fish in the water bodies of the Samarkand region. In the course of the research, the body length and the mass of the infected fish, the body length of the parasite Ligula intestinalis and the indicators of the intensity of invasion (II) were determined. In addition, the article analyses the dynamics of the changes in the main organoleptic (appearance, smell, consistency) and biochemical (pH, protein, fat and glycogen content) indicators of fish meat depending on the intensity of invasion. The results obtained made it possible to identify the factors influencing the physiological state of the fish, the quality of the product and their veterinary-sanitary assessment.
